I’m never a big fan of salad greens until recently. Well precisely until my sister went to culinary art last year and came back with awesome salad recipes during her semester breaks. I could eat up to 5 rounds of her salads. Now that we’re cultivating those healthy lifestyle, I’m not sure how am I able to whipped up those salad dressings my sister did from scratch. I tried but it’s hard if you’re preparing for one person. The leftover dressing could go wasted. So here’s my version of a simple yet satisfying salad you could do yourself.

One thing you ought to know about me, I can NOT have my salads without these 2 important fillings – cheese, chicken
I can live with eating just the greens alone but once in awhile I love to have my chicken meat and I like it pan fried.
What you need :
Baby Romania salad (my favourite! The rest taste so ‘healthy’ and bitter after taste urgh!)
Tomatoes
Chicken fillet or breast meat (marinate overnight. I love Masterfood AllPurpose seasoning)
Feta with olive oils and sun dried tomatoes (the most vital ingredients. Just remember feta is salty cheese) or
Parmesan cheese (if Feta is too expensive, you can opt for this one)
1. Clean your baby romania salad leaves. Make sure you dry the leaves well before you place it in the bowl. I normally wrapped them with kitchen paper and refrigerate for an hour or so.
2. Pan fry the chicken meat with slow fire. I love to have my chicken meat a lil bit crunchy on the outside. Cut into pieces.
3. Place everything into salad bowl and toss thoroughly the dressing (the dressing comes together with Feta cheese) then you’re good to go!
For more varieties in your salads, you can put hard boiled eggs, red pepper, capsicum, olives etc
